Black eyed pea salsa dip is the best dip & appetizer–so fresh, so colorful, so flavorful thanks to marinating. Naturally gluten & dairy free

Ingredients

  • 1 can of black eyed peas, drained
  • 1 can sweet corn (drained)
  • 1 red bell pepper, diced
  • 1/3 of a red onion, diced
  • 1/2 cup sugar
  • 1/2 cup white vinegar
  • 1/2 cup olive oil
  • 1/8 cup tiger sauce
  • 1 bunch fresh cilantro
  • 1 avocado, diced

Instructions

  1. In a large mixing bowl, add all of the ingredients except the cilantro and avocado (drained black eyed peas, drained corn, diced red bell pepper, diced red onion, sugar, vinegar, olive oil and tiger sauce). Marinate 4 hours to overnight.
  2. When ready to serve, drain 95% of the liquid (keeping just a small amount so that it doesn’t dry out.) And add in the chopped cilantro and diced avocado. Stir well.
  3. Serve with your favorite chips.
  4. If there are any leftovers, you can keep them stored in an air tight container fin the fridge for 1-2 days.
