This gluten-free, vegan, and top 8 allergy-free cornbread recipe is truly amazing. No complicated gluten-free flour mixes needed – just simple cornmeal. It’s so delicious, it’s even been featured on TV!

Ingredients

  • 3/4 cup milk of choice (we use rice)
  • 1 Tablespoon apple cider vinegar
  • 2 cups cornmeal
  • 2 Tablespoon baking powder
  • 1 tsp salt
  • 1/2 tsp baking soda
  • 1/4 cup sugar
  • one 15-oz can sweet corn, undrained
  • 2 Tablespoons coconut oil
  • 1/4 cup applesauce

Instructions

  1. Preheat oven to 420°F (215°C).
  2. Mix the vinegar with your milk of choice, and set aside to curdle slightly (this creates a buttermilk substitute).
  3. Combine all dry ingredients (cornmeal, baking powder, salt, baking soda, sugar) in a large bowl and mix very well to ensure even distribution.
  4. In your blender, combine the coconut oil, applesauce, and the undrained can of sweet corn. Pulse until it reaches your desired consistency. (I prefer mine totally smooth for a uniform texture, but some prefer more of a rustic texture with noticeable corn kernels).
  5. Then, pour the wet ingredients (both the blender mixture and the vinegar-milk mixture) into the dry ingredients and mix until just combined. Be careful not to overmix. Pour the batter into a greased 8×8 inch baking dish and bake for about 25 minutes, or until golden brown and a toothpick inserted into the center comes out clean. Let cool for at least 15 minutes before attempting to cut, as it will crumble if cut too soon.
