The easiest frozen treat you will ever make! This 3-ingredient Vegan Strawberry Pie Pop tastes like a slice of strawberry pie, without any of the work. A cool treat to enjoy this summer, it’s unique shape makes it extra fun. This is allergy-friendly and is free of: wheat, dairy, egg, soy, peanut and tree nuts. It’s also vegan and gluten-free!

Ingredients

  • 1 carton of dairy-free ice cream, softened (we’ve used So Delicious, Nada Moo & Tofutti without any problems–be sure it fits your dietary needs!)
  • 1 package of washed and diced strawberries
  • 1 package of Vanilla Honey Graham Crunchy Cookies
  • Small Dixie paper cups
  • Wooden popsicle sticks

Instructions

  1. Let the ice cream soften at room temperature until it’s easily stir-able, but not completely melted.
  2. While the ice cream softens, take your Enjoy Life Vanilla Honey Graham Crunchy Cookies and crush them into crumbs. Also, wash and dice your fresh strawberries into small pieces.
  3. Pour the softened ice cream into a large bowl. Add about 3/4 of the crushed cookies and all of the diced strawberries. Gently fold them into the ice cream. You can adjust the amount of cookies and strawberries to your personal liking.
  4. Take a small Dixie paper cup and fill it halfway with the ice cream mixture. Sprinkle some of the remaining cookie crumbs into the center as a delicious middle layer. Then, top with more of the ice cream mixture until the cup is full.
  5. Carefully insert a wooden popsicle stick into the center of each filled Dixie cup.
  6. Once all the ice cream mixture has been used and the cups are filled, place the cups on a tray and transfer them to your freezer. Freeze for 2-3 hours, or until completely firm and set.
  7. To enjoy your Vegan Strawberry Pie Pop, simply pull the paper cup off (it peels away easily) and indulge in this fun, refreshing treat!
