No bake, clean ingredients and crazy delicious–I’m talking I could tell my kids these were cookies and they’d have no idea they’re packed with B vitamins, protein, omega-3 fatty acids and fiber. This is also free of: grains, gluten, dairy, egg, peanut, tree nuts and oats. Yes, an energy ball that is oat free! These can also be easily made vegan.

Ingredients

  • 1 cup buckwheat groats, uncooked
  • 1/2 cup SunButter, or other nut or seed butter of choice
  • 1/3 cup honey (for a vegan version, use maple syrup or agave nectar)
  • 1/4 cup shredded unsweetened coconut
  • 1/4 cup mini chocolate chips (ensure they are dairy-free if needed)
  • 1/2 scoop vanilla protein powder (optional, but recommended for extra protein; use a brand safe for your diet)
  • 1 Tablespoon chia seeds (or you can use hemp hearts!)
  • 1 tsp pure vanilla extract
  • dash of sea salt

Instructions

  1. In a stand mixer fitted with the paddle attachment, add all of the ingredients. Mix on medium speed until everything is thoroughly incorporated and forms a cohesive mixture.
  2. Using a small cookie scoop or a tablespoon, scoop out portions of the mixture. Roll each portion into a compact ball with your hands, especially if the mixture is a bit crumbly. Place the finished balls on a piece of wax paper.
  3. Chill the energy balls in the refrigerator for at least 30 minutes to help them set. Once chilled, they can be stored at room temperature in an airtight container for a few days, or in the fridge for up to two weeks.
