Another excellent, widely available option is King Arthur’s 1:1 Baking Flour. It’s crucial to stick to these or similar 1:1 blends that already include xanthan gum. Different brands formulate their all-purpose gluten-free flours with unique ratios of grains (rice flour, potato starch, tapioca flour, etc.) and may or may not include xanthan gum. These include Endangered Species Chocolate Premium Oat Milk Baking Chips (55% cocoa), Enjoy Life Semi-Sweet Mini Chips, and Ghirardelli Non-Dairy Dark Chocolate Chips for Baking. To achieve a well-rounded flavor profile and keep costs down, I often buy a few different brands and combine them into one large, airtight bag. A good shake ensures a lovely assortment of flavors and shapes, adding complexity to the brownies. This also allows you to experiment with different cocoa percentages and sweetness levels.

Dense, fudgy brownies all without any gluten or dairy. This classic cholately treat comes together easily with one bowl and a spatula and will be on repeat with it’s perfect texture. This dessert is also free of: fish, shellfish, peanuts, tree nuts and sesame, with a soy-free option too.

Ingredients

  • 20 Tablespoons dairy free butter (2 and 1/2 sticks)
  • 1 cup dairy free chocolate chips
  • 1 cup brown sugar
  • 1 and 1/2 cup granulated sugar
  • 4 large eggs + 2 egg yolks
  • 1 TBSP vanilla extract
  • 1 teaspoon salt
  • 2/3 cup unsweetened cocoa powder
  • 1 and 1/2 cups gluten-free all purpose flour, with xanthan included (see notes)

Instructions

  1. Preheat oven to 350 degrees. Grease a 13×9 rectangular pan with non-stick spray and set aside.
  2. In a large microwave bowl, add your dairy-free butter and chocolate chips. Melt in your microwave 30 seconds at a time, stirring after each set until the chocolate chips are melted.
  3. Add in your sugars and stir well.
  4. Add in your eggs and egg yolks and whisk well.
  5. Add in your cocoa powder and stir.
  6. Add in your flour and stir. The batter will be very thick and you’ll need to make sure you stir it well and scrape the sides and bottom to incorporate everything.
  7. Spread evenly into your greased pan.
  8. Bake for 30-35 minutes, or until the edges are set and the middle is done as much as you like (some may like it a little less or a little more depending on how fudgy you like them).
  9. Allow to cool before cutting into them.
  10. Store room temperature, covered tightly.
