Ingredients

  • Olive oil
  • 1 pound ground chicken
  • 1 Tablespoon minced garlic
  • 1 batch homemade taco seasoning (see below)
  • 1/4 cup brown sugar
  • 1 can (15 oz) black beans, undrained
  • 1 can (15 oz) kidney beans, undrained
  • 1 can (15 oz) corn, undrained
  • 1 can (15 oz) diced tomatoes, undrained
  • 1 small (8 oz) can tomato sauce
  • Homemade Gluten-Free Taco Seasoning:
  • 1 Tablespoon chili powder
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • ¼ teaspoon red pepper flakes
  • ¼ teaspoon dried oregano
  • 1½ teaspoon ground cumin

Once the chicken is fully cooked, drain any excess fat if desired, then carefully dump in all of the undrained cans of black beans, kidney beans, corn, diced tomatoes, and the tomato sauce.
  2. Bring the soup to a gentle simmer. Allow it to simmer for at least 10 minutes, or until all the ingredients are heated through and the delicious flavors have fully melded together. Stir occasionally to prevent sticking.
