Ingredients
- 3 T. olive oil
- 1 large onion, chopped
- 4 cloves garlic, minced
- 2 bay leaves
- 2 tsp. dried oregano
- 3 carrots chopped
- 2 medium potatoes, peeled, and chopped into small pieces
- One 28 oz. basil and oregano crushed tomatoes, with juice
- 5 cups vegetable broth (Note: if you’re not worried about it being vegan, chicken broth also works)
- 1 T agave (Note: if you’re not worried about it being vegan, honey will work)
- 1 T balsamic vinegar
- 2 T. red wine
- 1 tsp salt (or more to taste)
- 1 can of white cannellini beans (liquid and all)
- 2 cups gluten-free short pasta of some kind
- 1 tsp. dried basil
- 1/4 cup chopped fresh basil
Instructions
- Heat up the oil in a stock pot and add the onion, salt and carrots and cook until they’re soft. Then, add the rest of the ingredients, minus the pasta. Simmer for about an hour, or until the potatoes are tender. It’s truly that simple!
- For the gluten-free noodles, it’s best to boil them in a separate pot with heavily salted water, as they are often more fragile than traditional wheat noodles. Follow the package directions for your specific pasta; for my preferred brand, 9-10 minutes usually results in a perfect al dente texture. Avoid overcooking, as the pasta will soften further when added to the hot soup. I recommend adding the cooked pasta to individual soup bowls right before serving to prevent it from becoming gummy.
- Alternatively, this Minestrone can be made in a crock pot or slow cooker. Cook on low for 6-8 hours, or until the potatoes are soft. As with the stove-top method, ensure you cook the noodles separately. Cooking them directly in the slow cooker will likely result in a mushy texture.
Notes
This soup is wonderfully versatile. While I omit celery due to an allergy, 1-2 stalks would be a great addition if tolerated.
