Instant Pot Dairy-free Ranch Potato Salad

Ingredients

  • 12 oz bacon, cooked and crumbled
  • 1 cup water
  • 5 pounds red potatoes, cut into bite-sized pieces
  • 1/2 Tablespoon dried parsley
  • 1/2 Tablespoon garlic powder
  • 1/2 Tablespoon onion powder
  • 1 tsp dried dill
  • 1/2 tsp dried chives
  • 1/2 tsp sea salt
  • 1/4 tsp pepper
  • 1 cup vegan mayo
  • 2 bunches green onions, thinly sliced–both the green and white parts

Instructions

  1. Open the lid to the Instant Pot and hold several pieces of bacon over the pot. Using kitchen shears (these are my FAVORITE), cut the bacon into bite-sized pieces and let it fall into the pot. Continue until all bacon is cut. Select “Sauté” and cook the bacon until it’s extra crispy, stirring occasionally. This typically takes around 5 minutes. While the bacon cooks, wash and dice your red potatoes, setting them aside.
  2. Once crispy, turn off the Instant Pot. Carefully remove the cooked bacon with a slotted spoon and place it on several layers of paper towels to absorb any excess grease.
  3. Carefully pour the rendered bacon grease from the Instant Pot into a safe, heat-proof container (I often save mine for other cooking!). If you’re not saving it, allow it to cool completely before discarding.
  4. Wash or wipe out the Instant Pot liner thoroughly to remove any remaining grease or bacon bits, ensuring a clean pot for cooking the potatoes.
  5. Add one cup of water to the clean Instant Pot liner. Place your trivet on top of the water (or, if you have a steamer basket, use that for even better results!). Arrange the diced potatoes evenly on top of the trivet or steamer basket. Close the lid securely and move the steam release valve to the “Sealing” position.
  6. Select “Manual” (or “Pressure Cook”) and use the plus and minus buttons to set the cooking time to 8 minutes.
  7. While the potatoes are cooking, prepare the ranch dressing. In a medium bowl, combine all the dry spices: dried parsley, dried dill, dried chives, garlic powder, onion powder, sea salt, and pepper. Add the cup of vegan mayonnaise and stir vigorously until all ingredients are well combined and the mixture is smooth and creamy. Set the dressing aside.
  8. Once the Instant Pot finishes cooking the potatoes, carefully move the steam release valve to “Venting” for a quick pressure release. Once the float valve drops, open the lid. Drain any remaining water from the pot and transfer the tender potatoes to a large mixing bowl. Gently fold in the spiced vegan mayo mixture, adding a little at a time, until the potatoes are evenly coated to your desired creaminess.
  9. Finely dice your green onions (both the green and white parts). Add the diced green onions and the crispy crumbled bacon to the potato mixture. Gently stir to distribute them throughout the salad. Serve the potato salad immediately while warm, or chill it in the refrigerator until you’re ready to serve.
