Allergy-friendly Skillet Jambalaya

A one skillet meal that has everything you need: meat, beans, rice and plenty of spice! A homemade spice blend (so now worrying if there’s wheat as a thickener or binder!) gives just the right amount of canjun pop to this southern dish. Serve with or without the sausage for a filling meal that’s on the table in less than 30 minutes. This Allergy-friendly 30 Minute Skillet Jambalaya is free of: gluten, dairy, egg, soy, peanut & tree nuts. It also has a vegan option!
Ingredients
- ¼ cup extra-virgin olive oil
- 1 red onion, diced
- 2 medium carrots, cut into half moons
- 1/2 of a red, yellow and orange bell pepper
- 4 cloves garlic
- 1 teaspoon paprika
- 2 teaspoons dried oregano
- 1 teaspoon dried parsley
- 1/2 teaspoon dried thyme
- 2 bay leaves
- 1 teaspoon salt
- freshly ground black pepper, to taste
- 15-ounce can diced, fire-roasted tomatoes
- 1 and ¼ cups white rice
- 2 and ½ cups chicken broth (or 2 and 1/2 cups water + bouillon
- 2 chicken cajun sausages, diced (or omit, if you’d like this to be vegan/vegetarian)
- 15-ounce can black-eyed peas
- hot sauce, for serving if desired
- chopped fresh parsley for garnish, optional
- if you like, mushrooms are also an excellent addition!
Instructions
- In a large skillet, heat the olive oil to medium and add the onions, celery, bell pepper and carrots. Stir until they’re soft. Next, add the garlic and stir until the garlic is fragrant, about 1 minute.
- Add the spices, the whole can of diced tomatoes, rice, sausage and broth. Bring to a boil, place a lid on it and turn it down until it’s a low simmer.
- Simmer for 20 minutes, or until the rice is tender.
- Stir in your drained black eyed peas to warm them, taste and adjust salt and pepper to your liking.
- Garnish with fresh parsley if so desired and serve.
- Leftovers keep well for up to 2 days, in an air-tight container.

Updated 7/16/2025: I omitted the two celery stalks and pinch of cayenne as my kids don’t prefer them, so we never use them and don’t miss them. Feel free to reintroduce them if they suit your taste!
