A chocolaty treat that’s spooktacular. Kids can enjoy rolling and cutting out the shapes, just like regular sugar cookie dough, but with a fun chocolate twist. These Chocolate Sugar Cookies Bats are free of: wheat, dairy, egg, soy, peanut & tree nut free; top-8-free & vegan.

Ingredients

  • 3/4 cup (one and a half sticks) vegan butter, softened
  • 1 cup granulated sugar
  • 1 flax egg (1 Tablespoon ground flax seed mixed with 2.5 Tablespoons water)
  • 1 teaspoon vanilla extract
  • 1 and 1/2 cups gluten-free flour blend
  • 3/4 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon xanthan gum
  • Pinch of salt
  • fine mesh strainer
  • Rolling pin
  • Bat cookie cutters
  • Candy eye balls (check for allergens)

Instructions

  1. In a stand mixer, with the paddle attachment, place all of your dry ingredients, except for the flour and cocoa. Using a fine mesh strainer, sift the flour and cocoa powder into the dry ingredients. This extra step helps prevent lumps, which is important for a smooth cookie dough since there’s no frosting to cover imperfections.
  2. Give all the dry ingredients a minute of mixing on low speed to ensure they are thoroughly combined.
  3. Gradually add all of the wet ingredients: vegan butter, sugar, flax egg, and vanilla extract. Stir until everything is fully incorporated and a cohesive dough forms.
  4. The dough will be somewhat sticky. Cover it tightly with plastic wrap and place it in the fridge to chill for at least one hour. Chilling is essential for firming the dough, making it much easier to roll and cut without sticking.
  5. Uncover the dough, and sprinkle a clean work surface generously with cocoa powder. (Using traditional flour will leave white residue on your dark cookies.) If needed, dust your rolling pin with cocoa powder as well to prevent sticking.
  6. Roll out the dough to a uniform thickness, aiming for about 1/4 inch thick. This consistency helps ensure even baking.
  7. Cut out your bat shapes using cookie cutters and gently transfer them to a baking sheet lined with parchment paper or lightly greased.
  8. Bake in a preheated oven at 350°F (175°C) for just 7-8 minutes. Baking time may vary slightly based on cookie size and thickness. The cookies will still appear soft when you take them out. A good indicator that they are done is when you start to smell them. Be careful not to overbake, as they will become too hard. Allow them to cool on the baking pan for 1-2 minutes, then carefully transfer them to a wire rack to cool completely.
  9. Once the cookies are thoroughly cool, apply your chosen decorations. Use candy eyeballs for a fun look or create red dots with allergy-friendly frosting for a spookier appearance. You can adhere the eyes with a tiny dab of coloring gel, honey (if not strictly vegan), or maple syrup.
