It’s very simple to make (less than 10 minutes!). Take something to a party that will be inclusive and keep everyone safe. This dairy free cranberry salsa is also free of: wheat, gluten, eggs, peanuts and tree nuts, is vegan and has a soy free option as well!
Ingredients
- 12 ounces fresh cranberries, washed
- 1 bunch green onions, 4-5 (white and green parts) roughly chopped
- 1-2 jalapeños, halved and seeds removed
- 1 bunch of fresh cilantro, rinsed and roughly chopped
- 2 Tablespoons lime juice
- 1/2 cup granulated sugar
- 1 pinch of salt
- 1 container of dairy-free cream cheese (see options in post)
- Gluten-free chips for dipping (see post for options)
Instructions
- If you prefer a more tart and fresh onion taste, prepare and serve this salsa immediately. For a sweeter, more mellow flavor where the sugar has time to soften the onions and meld with the cranberries, make it a day ahead of time. Both methods yield a delicious result!
- Rinse the fresh cranberries thoroughly and set them aside.
- Roughly chop both the white and green parts of the green onions. Place these into a food processor. (A food processor offers better control for a chunkier texture, whereas a blender tends to make it smoother, which isn’t ideal for salsa.)
- Halve the jalapeño(s) – use one for mild heat, two for a spicier kick. Remove the stems and all seeds to control the heat level, then add them to the food processor with the green onions.
- Rinse the fresh cilantro. Chop the bunch in half; use the top leafy part and discard the bottom stems. Add the top portion of the cilantro to the food processor.
- Process the green onions, jalapeños, and cilantro in the food processor until they are finely chopped. You want small, consistent pieces to avoid large bites of raw jalapeño or onion.
- Now, add the lime juice, granulated sugar, a pinch of salt, and the rinsed cranberries to the food processor. Pulse the mixture until the cranberries are chopped to your desired size – typically small, consistent pieces for a salsa-like texture.
- If serving immediately, evenly spread your chosen dairy-free cream cheese onto a serving platter. Spoon the cranberry salsa generously on top. Serve with your favorite gluten-free chips or crackers.
- If preparing a day ahead, store the cranberry salsa in a separate airtight container in the refrigerator. Wait to spread the cream cheese and top it with the salsa until just before serving.
