Cook until the bacon is very crispy. It’s crucial for the bacon to be thoroughly cooked and crispy, as it will be going into a wet egg mixture; you want to avoid it becoming chewy. Do not cook the bacon in long strips, as they will curl and cook unevenly. While the bacon cooks, finely dice your red onion and set it aside.
  4. Once the bacon is crispy, use a slotted spoon to transfer it to a paper towel-lined plate to drain excess grease. Leave enough bacon grease in the skillet to lightly coat the bottom for cooking the onions.
  5. Lower your heat to medium and add the finely diced red onion to the skillet with the bacon grease.
