My journey into the world of allergy-friendly foods began with a moment that changed everything for our family. When my first son was just 11 months old, he experienced anaphylaxis to milk. In that terrifying moment, a wave of concern washed over me, extending to all the simple joys he might miss out on. With desperate fingers, I grabbed a package and meticulously read every ingredient, not once, but twice. “How is it possible there’s NO DAIRY?” I wondered aloud, disbelief and hope warring within me. For instance, the Glutino cookies might carry a “May contain milk, eggs, peanut and tree nuts” statement on their packaging. I personally contacted them about this, and the representative explained that this statement applies if the facility handles those ingredients at all. However, they assured me of rigorous protocols, including completely stopping production, extensive machine cleaning for hours, and thorough testing before starting a new run for their allergen-friendly products. This information made me feel comfortable consuming their cookies. I strongly advise you to call manufacturers yourself, verify their processes, and make decisions based on your family’s specific allergy severity and comfort level.
Once you have your safe cookies and Enjoy Life chocolate morsels, the rest is pure fun! With just a dollop of food coloring gel, you can transform these simple ingredients into delightfully spooky Monster Eyeballs. An incredibly easy, no-bake Halloween treat made with just a few store-bought ingredients! These spooky Monster Eyeballs are guaranteed to bring smiles and save you time. Perfectly free of gluten, dairy, egg, peanuts, and tree nuts, they’re also vegan-friendly – ideal for inclusive parties!
Ingredients
- Gluten-free, dairy-free sandwich cookies (like Glutino or Kinnikinick)
- 1 package of Mini Dark Chocolate Morsels by Enjoy Life
- Red food coloring gel
- Small food-safe paint brush
- Green food coloring gel
Instructions
- Prepare the Cookie Bases: Carefully separate the sandwich cookies. For a more effective “eyeball” appearance, try to keep all of the white cream filling on one side of the cookie. The plain cookie halves can be saved for later snacking, or even used as a delicious, allergy-friendly crust for other desserts (like this frozen raspberry pie!).
- Add the Iris: Squeeze a small dollop of green food coloring gel directly onto the center of the white cream filling on each prepared cookie half. You don’t need much, just enough to create a vibrant green circle.
- Place the Pupil: Gently place a Mini Dark Chocolate Morsel by Enjoy Life into the middle of the green food coloring. Position it tip-side down so that the wider, flatter part of the morsel is showing, creating a distinct pupil for your monster eye.
- Create Bloodshot Veins: Dip your small, food-safe paint brush into a bit of red food coloring gel. Carefully draw zigzags, squiggles, and streaks around the green “iris” and across the white “eyeball” to create spooky, bloodshot veins. Don’t worry about perfection – the messier, the more monstrous and fun they look!
- Serve and Enjoy: Arrange your finished Monster Eyeballs on a platter and serve immediately. These treats are best enjoyed fresh, but can be stored in an airtight container at room temperature for a day or two.
