Literally my favorite taco EVER! Experience the ease of slow cooking combined with incredible flavor in these tender, juicy pork tacos. Naturally gluten and dairy-free, they’re perfect for feeding a crowd and simple enough for any weeknight. With minimal ingredients, this recipe promises abundant leftovers and pure taco bliss. Don’t forget the essential pickled red onions for an irresistible zing!
Ingredients
PORK:
- 2-3 lbs. boneless pork shoulder roast (picnic roast or pork butt)
- 6 Tablespoons of lime juice (bottled or fresh)
- 1 Tablespoon honey
- 1 Tablespoon olive oil
- 2 Tablespoons chili powder
- 1 teaspoon ground coriander
- 1 teaspoon ground cumin
- 2 teaspoons salt
- 1/2 teaspoon black pepper
PICKLED RED ONIONS:
- ⅓ cup lime juice–fresh or bottled
- ⅓ cup red wine vinegar⠀
- ⅓ cup sugar⠀
- 1 Tablespoon salt⠀
- 1 jalapeno, seeded and diced⠀
- ½ medium red onion, thinly sliced⠀
ADDITIONAL (FOR SERVING):
- Warmed corn tortillas (gluten-free)
- Guacamole
- Fresh cilantro, diced
- Pico de gallo
- Refried beans (optional)
- Cilantro lime rice (optional)
Instructions
- Turn your slow cooker to low. Place the olive oil in the bottom of the slow cooker, then place your pork roast on top. Pour the lime juice and honey over the roast. Sprinkle the spices (chili powder, coriander, cumin, salt, and pepper) evenly over the pork.
- Place the lid on your slow cooker and cook for 6-8 hours, or until the pork is incredibly tender and easily falls apart with a fork.
- While the pork is cooking, prepare your pickled red onions (directions below).
- Once the pork roast is ready, carefully remove it from the slow cooker and transfer it to a large bowl or cutting board. Shred the pork using two forks, discarding any excess fat as you go. Return the shredded pork to the slow cooker and stir it around in all those delicious, flavorful juices to absorb maximum flavor.
- Serve the tender shredded pork over warm corn tortillas. Garnish generously with the homemade pickled red onions and any other desired gluten-free and dairy-free toppings, especially guacamole! These tacos are fantastic served alongside cilantro lime rice and refried beans from my cookbook.
- Place the thinly sliced red onion in a heat-safe container (such as a jar or bowl) that has enough space for about an additional cup of liquid.
- In a small saucepan, combine the lime juice, red wine vinegar, sugar, salt, and diced jalapeno slices. Heat over medium heat, bringing the mixture to a low boil. Stir occasionally until the sugar completely dissolves.
- Carefully pour the hot liquid over the red onions in the container. Allow the mixture to cool at room temperature for about twenty minutes. Once cooled, place a lid or plastic wrap over the container and refrigerate. The pickled red onions will keep well for up to a week in the fridge.
