Perfect for the fourth of July, this cold treat sandwiches a homemade white layer that is a heavenly mixture of vanilla rice milk, dairy-free sour cream, sugar, and vanilla to make the entire dessert creamy and delicious. This recipe is carefully crafted to be free from gluten, dairy, eggs, peanuts, and tree nuts, making it a safe and delightful choice for almost any dietary need.

  • Blue Layer:
  • 1 (6 oz) box Blue Raspberry Jello
  • 2 cups boiling water
  • 1 cup ice cubes
  • Red Layer:
  • 1 (6 oz) box Raspberry Jello
  • 2 cups boiling water
  • 1 cup ice cubes
  • White Layer:
  • 2 envelopes Knox original gelatine
  • 1/2 cup cold water
  • 2 cups vanilla rice milk
  • 1 1/2 cups sugar
  • 2 cups dairy-free sour cream
  • 2 tsp. vanilla extract
  • 1 (10-inch) bundt pan

Instructions

  1. Prepare Bundt Pan: To ensure easy removal, generously spray your 10-inch bundt pan with a non-stick cooking spray, making sure to cover all crevices.
  2. Prepare and Set Blue Layer: In a saucepan, bring several cups of water to a rolling boil (using more water than needed for easy measuring). Once boiling, pour exactly two cups of this boiling water into a heatproof bowl. Stir in the entire 6 oz package of blue raspberry jello until it is completely dissolved. Add one cup of ice cubes and stir continuously until they are fully melted. Carefully pour this blue jello mixture into your greased bundt pan. Place the bundt pan in the freezer for approximately twenty minutes to allow this first layer to set firmly.
  3. Bloom Gelatin for White Layer: Rinse out your bowl. Sprinkle two envelopes of Knox original gelatin over 1/2 cup of cold water in the bowl. Stir well to ensure the gelatin is fully moistened and let it sit for five minutes to “bloom” (thicken and absorb the water) while you gather the remaining ingredients for the white layer.
  4. Prepare White Creamy Layer Mixture: In a small saucepan, gently heat two cups of vanilla rice milk until it begins to simmer. Do not bring to a hard boil. Once simmering, add the 1 1/2 cups of sugar and the bloomed gelatin mixture. Stir until both the sugar and gelatin are completely dissolved. Remove the pan from the heat. Stir in two cups of dairy-free sour cream and two teaspoons of vanilla extract. For a perfectly smooth consistency, transfer this mixture to a blender and blend until everything is thoroughly incorporated and emulsified. Dairy-free sour cream tends to separate if only hand-stirred, so blending is key for a creamy texture.
  5. Cool White Layer Mixture: Pour the blended white layer mixture back into a clean bowl or leave it in the blender pitcher, and place it in the refrigerator. This step is crucial for the mixture to return to room temperature (or slightly cooler) before adding it to the blue layer. Be careful not to let it sit too long, or it will begin to set too much in the bowl.
  6. Add and Set White Layer: Check the blue layer in the freezer to ensure it is fully set. It should be firm to the touch. Gently and carefully spoon the cooled white layer mixture onto the set blue layer. Pouring directly can break the delicate blue layer. You may find you only need about 3/4 of the white mixture to leave ample space for the final red layer. Once the white layer is evenly distributed, return the bundt pan to the freezer. This layer typically takes a bit longer to set, often closer to 40 minutes.
  7. Prepare Red Layer: Bring more water to a boil in a clean saucepan. Pour two cups of boiling water into a bowl and stir in the entire 6 oz package of raspberry jello until completely dissolved. Add one cup of ice cubes and stir until they are fully melted. Let this mixture cool slightly.
  8. Add and Chill Red Layer Overnight: Once the white layer is firmly set, remove the bundt pan from the freezer. Similar to the white layer, carefully spoon the red jello mixture onto the set white layer to prevent disturbing it. After the red layer is added, transfer the bundt pan to the refrigerator and allow it to chill and set completely overnight. Freezing the final layer is not recommended, as it can affect the texture.
  9. Serve Your Patriotic Jello Bundt: When you’re ready to serve, place a large serving plate or platter upside down over the top of the bundt pan. Hold the plate and pan tightly together, then confidently flip and invert the bundt. The jello mold should slide out easily, revealing your beautiful creation! Remember that jello can become flatter if left out at room temperature for extended periods, so only take it out when you’re ready to serve and enjoy this festive treat.
